Toffee, pear & pecan muffins
100g self raising flour
Pinch of baking soda
Pinch of cinnamon
25g Demerara sugar
110 ml milk
1 egg(beaten)
30g melted butter
30g soft toffee (chopped)
10 g pecans (chopped)
1/2 pear(poached & diced)
Method.........
1.in a mixing bowl add flour with baking soda,cinnamon & pinch of Maldon sea salt and mix well.
2.in a separate bowl mix egg,milk & half both toffee& nuts.
3.now add wet mix to dry followed by melted butter,pears.
4.place in muffin mould & top with remaining toffee & nuts.
5.bake 190c 20-25 minutes
6. Cool & serve
